延續《王哥柳哥遊台灣》大受歡迎的滑稽喜鬧路線，是李行台語片階段的重要代表作之一。片名的豬八戒先於孫悟空，可見他對八戒這類滑稽人物的偏愛，以及他早期創作對甘草角色與通俗故事的重視，飾演八戒的正是「王哥」李冠章，他把王哥的逗趣表演延伸到《西遊記》的神怪世界。片中歌曲由寶島歌后紀露霞等人幕後演唱，並配上歌詞字幕，凸顯台語片與流行歌曲市場彼此拉抬的關係，以及歌曲在當時觀眾觀影經驗中的核心位置。此片於何基明的華興製片廠完成攝製。
